A Practice Note providing an overview of how the US Department of Agriculture's (USDA) Food Safety and Inspection Service (FSIS) regulates meat, poultry, Siluriformes fish, and egg products. This Note discusses the foods amenable to FSIS inspection as well as regulatory requirements for FSIS-inspected establishments and plants, importing FSIS-regulated foods, and applying for a grant of federal inspection. It also covers state meat and poultry inspection, exemptions from inspection, and FSIS enforcement options.
